TAMARIND:
Tamarind
grows as a forest tree in India. With the increase in
demand the trees are cultivated also now a days. Growth
of Tamarind trees does depend on rainfall though it
is a forest tree. It requires minimum water which it
can draw from the soil. It requires minimum manual care
unlike other plants and trees. A fully grown tree can
be 80 feet high with circumference of 25 feet. It usually
begins to bear fruits after 13-14 years and continues
to give abundant crop for more than 60 years. The tree
flowers in spring and its fruits ripen in winter. A
full grown tree yields about 180 to 200 kgs of fruits.
Tamarind tree is a large evergreen tree that grows rapidly
and lives more than 100 years. Tamarind trees are available
in plenty in South India - Karnataka, Andhra and Tamilnadu.
PULP
OF TAMARIND:
Tamarind
pulp is one of the souring agent in Indian curries chutneys
and sauces. For preservation the pulp is mixed with
about 10% of salt trodden - and made into balls. Because
of sugar and acid contents the pulp is used in almost
all kitchens for curries, syrups beverages etc.
SEEDS
OF TAMARIND:
Tamarind
fruit has skin ( outer layer ), pulp ( inner layer )
and the seeds. The seeds are flat and of irregular shape
- mostly oval. It is of the size of 7.5 mm X 15 mm.
The Kernel is covered by taste. Seed has about 30% testa
and 70% Kernel. Testa has rich brown colour and Kernel
is of white colour. Testa is removed by roasting the
seeds. Kernels have ingredients like protein, crude
fibre, carbohydrate ash and oil. It is learnt that the
minerals and carbohydrates in the Tamarind Kernels compare
well with those of oats.
